Everything that can be made here is made here. The bread goes in at seven, the yoghurt is strained overnight, and the lamb is trimmed by hand each morning rather than arriving in a bag.

The grill is charcoal and always has been. It is slower, it is harder work, and it is the entire reason the food tastes like it does.

    The room takes a saz player most Fridays and a full trio on Saturdays. Booking is the same table booking, so nothing is double sold.

    The back room seats twenty-four on one table, or the whole restaurant goes exclusive for up to seventy-eight. Engagements, wakes, work Christmas dinners and the sort of birthday where nobody wants to split a bill fourteen ways.
